Found: Syracuse brewers brew the British way
By Manmeet Sahni
A Syracuse couple – Mark and Mary Rubenstein found the Middle Ages Brewing Company in 1995. The Brewery is located near Syracuse’s downtown area.
This is the only fully functional brewery, which follows traditional British methods of brewing. Middle Ages brews handcrafted ales using traditional English brewing methods like open fermentation. This is unique as opposed to the regular methods used in the States. Jess Reaves, the Head Brewer guides through the process of brewing different ales in the video. He has been with Middle Ages for three years now. He informs that they do not use computers to control the brewing cycles and they physically weigh out the malts, so it’s completely handcrafted. Middle Ages Brewery reuses the yeast strain, which is more than 150 years old. Also, no fillers are used during the brewing process.

Locals consume most of the brewery produce while some of it is also distributed throughout Upstate New York. Some of their ales are Syracuse Pale Ale, Impaled Ale, Wailing Wench, Swallow Wit, and Dinosaur BBQ’s House Beer – Ape Hanger Ale. The kegging and the bottling takes place every Friday.
